The hotel brand approached Union Square Events with the expectation to develop a F&B retail market concept that would meet their guests' expectations for activated, all-day quick grab offering. To strike a balance between operating profit and meeting these guest expectations, USE contributed to the hotels F&B development by offering culinary visioning, operation planning, and strategic labor modeling.

OUR SCOPE

  • Evaluated and enhanced the design strategy, providing insights on guest layout and flow. Conducted a comprehensive review of signage, merchandising, and collateral packages, addressing operational needs and implementing best practices.

  • Developed the culinary vision for the concept, inclusive of full menu development, recipe creation, and retail souring. 

  • Reviewed and optimized the foodservice layout and equipment overview for efficient operations planning.

  • Established a service and labor model, outlining specific plans for each area during different meal periods.
